Under Irish law you had to feed whoever turned up. Hospitality was an obligation with a price attached — refusing a traveller damaged your honour and could cost you in court — and monasteries carried the heaviest version of it, running guest houses for anyone on the road.
The Open-Air Table is set in a culture where turning someone away was not rudeness but a legal matter.
